Basically, you’ll need to override the default end date that’s set for the term in the backend of Canvas (which most people can’t even see).

How do I set up an anonymous survey in Canvas and view its results?

Not much is required for making a Canvas survey’s responses anonymous—just select the “Keep Submissions Anonymous” checkbox in its settings. Once you’ve collected responses, you would simply return to the survey and click the Survey Statistics link.
