Extraction of essential oils is a technique used in Organic Chemistry labs in order to teach the process of steam distillation in the purification of organic samples. Through the use of steam distillation essential oils were extracted from their natural sources. Specifically, essential oils were extracted from the following spices: anise seed, cinnamon sticks, cloves, caraway seed, and spearmint oil. Each spice had a different expected main component to be extracted including the following compounds: eugenol, anethole, (+\/-) carvone, and trans-cinnamaldehyde. As already included in the experiment, Infrared spectroscopy would be used first by students to identify bond and functional group types determine consistency with the structure of the expected major component of each spice extract. Other methods used by previously, also helped show consistency with the structures of the essential oil but did not give a definitive identification (ID). Hence, the researchers in this experiment sought to develop a program that would help students make a more conclusive ID of the components of their extracts. In order to improve student learning, a Gas Chromatography-Mass Spectrum (GC-MS) program was designed that could not only separate the essential oils; but also provide consistent GC retention times making identification possible. Additionally, analysis using MS data would help students not just make identifications but also conceptualize what exactly MS identification is based upon. Depending on the essential oil, student may or may not get the expected identification of their main component in the essential oil.
