Some consider purslane a weed and perhaps you have seen this little green plant with red stems growing in your yard! However, it’s also a very nutritious plant. Purslane is a great source of omega-3 fatty acids (Uddin et al., 2014) and a good source of potassium and magnesium (USDA Food Data). Purslane can be eaten raw and tossed in a salad. The Farm got some much-needed rain this week! Planting fall crops will begin soon, so preparations for planting and seeding are happening at the Farm!
